Driving won't be fun but there is little you can do about it. You can get to Universal Studios and Hollywood Blvd are on the same subway line. You can transfer from a number of subway, and commuter train lines in Los Angeles. You can see the sign from lots of places, like Hollywood Blvd.
Universal is only a single day park. Disneyland is a 3 day park, it is small and compacts but has tons of attractions. Many similiar but most superior to their WDW counterparts, and just a few exactly the same.
Incidently using CityPass for Hollywood and for those parks is very convinient.
Santa Monica is good to visit to see sufers, Venice to people watch. To swim and play in the sand Hunington, Newport and many beaches on the way to San Diego are much nicer.
You will probably want to stay in two hotels, like one in the north and one in the south. There is a Marriot right in Santa Monica, were you can walk to the tourist sites from. A Fairfield just 5 minutes from the gates by foot, at Disneyland Resort.
San Diego has a lot of other nice places to visit if you wanted to spend more than a day there.
